White Cheddar Bisque

As the seasons change and cooler weather sets in, there is nothing quite like a warm and comforting bowl of soup to soothe the soul. One of the most delightful and indulgent soups you can make is a creamy white cheddar bisque. This rich and velvety soup combines the sharpness of white cheddar cheese creating a dish that’s perfect for cozy dinners or gatherings with friends and family.
Ingredients:
8 tablespoons unsalted butter
1 Medium white onion
3 celery stalks cut into ¼ inch
½ cup flour
32 oz chicken broth
1 lb sharp white cheddar cheese
Small handful Carolina reaper cheese
1 pinch Cyanne pepper
1 cup heavy cream
½ teaspoon Kosher salt
1 teaspoon pepper
¼ cup minced green onions.
1 package thick cut bacon
Instructions:
In a large soup pot, melt the butter over medium heat add the onion, celery and 3 bacon slices. Cook until the onion is tender and translucent about 6 minutes.
Add the flour and cook stirring constantly for about 2 minutes.
Stir in a little chicken broth and use a spoon to scrape up the bits from the bottom of the pan.
Add the rest of the broth and bring to a boil. Reduce the heat and when the broth stops bubbling, stir in the cheddar until well combined. Slowly add the heavy cream stirring constantly. Add the salt and white pepper.
When the cheesed has fully melted and the soup is fully combined, remove and set the bacon slice aside. using a blender blend the soup until smooth and velvety. (Let cool slightly and working in small batches as necessary, process in the blender filling no more than ½ way. Remove the little steam vent from the lid.
Add back to the pot add Carolina reaper cheese and one pinch Cayenne pepper
Serve and top with crumbled bacon and a pinch of green onion.
Serve with a side of garlic bread.
