Southwestern Beef Tortilla Bake

Ingredients:
- 2 lbs. Lean Ground Beef
- 1 yellow onion
- 1 cup green bell pepper/ Red pepper diced
- ½ teaspoon salt
- 10 flour tortillas (8’ quartered)
- 3 cups shredded Mexican cheese
Sauce:
- 1 70 oz can Campbell cream of mushroom soup with roasted garlic
- ¾ cup sour cream
- ¾ cup chicken broth
- 1 10 oz can diced tomatoes
- 14.5 oz can diced green chilies
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon onion powder
- ½ teaspoon chili powder
- ¼ teaspoon pepper

Instructions:
- Preheat oven 350 degrease
- in a large skillet add ground beef and diced onions. Sauté 7-8 minutes, crumbling the beef as it cooks, add the bell pepper and salt, and continue to sauté until the meat is completely cooked through and the peppers have started to soften.
- Transfer the meat mixture to a paper plate with a paper towel to drain the grease.
- Next to make the creamy sauce. In a saucepan add soup sour cream chicken broth, drained tomatoes, diced green chiles and seasonings.
- Heat over medium heat whisking frequently for 3-4 Minutes until the mixture begins to bubble.
- Spray a 9x13’ casserole dish with cooking spray or oil.
- Place ½ of the tortilla pieces in the bottom of the baking dish.
- Top the tortillas wit ½ of the cooked ground beef and pepper mixture, then ½ of the cream sauce. Then ½ of the cheese over the top.
- Make a second and final layer by placing the remainder of the tortillas the ground beef and cream sauce and finally the rest of the shredded cheese.
- Bake for 30-40 Minutes or until cheese is fully melted and starting to brown.
- Remove from oven and top with Doritos
- Let cool 10-15 Minutes before slicing
