Fajita Night

Ingredients:  

  • 1 Lb boneless skinless chicken breasts  
  • 2 pkg fajita seasoning  
  • 2 large bell peppers sliced  
  • 1 medium onion  
  • Salt and pepper  
  • Flour tortillas  
  • Shredded cheddar cheese  

Instructions:  

  • Prepare the Chicken: Pat the chicken breasts dry and season both sides with fajita seasoning. Rub it in thoroughly. 
  • Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sauté for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and cover with foil to keep warm. 
  • Cook the Vegetables: Add the bell peppers and onions to the skillet. Add Fajita seasoning. Sauté for 4-5 minutes, stirring occasionally, until softened and slightly browned. Season with salt and pepper. 
  • Slice the Chicken: While the vegetables are cooking, slice the chicken breasts against the grain into thin strips. 
  • Combine and Serve: Add the sliced chicken back to the skillet with the vegetables. If desired, squeeze lime juice over the fajitas. Serve with warm tortillas and your favorite toppings like sour cream, guacamole, or shredded cheese.
